We are officially making Bourbon!

As you all know, Everwild Spirits officially opened our Tasting Room & Lounge this past July 1st, just four short months ago, which is hard to believe. Over that time, we have welcomed over 10,000 guests (amazing!), sold over 2,000 bottles of our Seekers bourbon, and made over 1,400 Old Fashioned craft cocktails (our #1 seller)! While all of these milestones are incredible, we still had yet to cross the most important one of all - making our own bourbon whiskey. Well, that day has arrived!

A huge thank you and kudos to Mike Skeggs, our Head Distiller. Mike has worked quietly behind the scenes the last 5-6 months to get our production process ready. As you might expect in a project this scale, we’ve had many surprises, supply chain issues, starts and stops and challenges along the way. Mike has weathered it all patiently, stoically, and just continued to move us forward despite the issues. We would not be making bourbon today without his diligence and consistent effort, and we are very grateful.

With all of our distillation equipment in place and operating, we are slowly ramping up our process. We started with a rate of one 300 gallon batch per week, and now will increase production to four batches per week over the next 30-60 days. Ultimately, at full production capacity we should be filling about ten 53 gallon new white American oak barrels per month with bourbon for aging.

We plan to age our bourbon for at least four years, so yes, you are going to have to be patient and wait a little while for it to be ready - but it will be well worth the wait.
